rawon Sembilang which was typical of Indonesia.
Ingredients;
500 gr Sembilang fish (catfish size), cut
into pieces
1500 ml of water
1 tsp lemon juice
2 cm galangal, crushed
1 stalk lemongrass, crushed
3 bay leaves oranges, cut into pieces
1 stalk spring onion, finely sliced
5 stalk small leek, finely sliced
1 bh acid kandis
Salt to taste
Oil for frying
Spices;
8 pcs onion
3 cloves garlic
3 cm ginger
1 cm turmeric
1/2 teaspoon cumin
1 tsp coriander
2 pcs red chilli, seeded
1/2 cm kencur
4 pcs kluwak
How to make:
1. Wash the fish, coat with salt and lime
juice. Let stand briefly then rinse thoroughly;
2. Puree all ingredients together and
stir-fry scallions, lemongrass, galangal and lime leaves until fragrant;
3. Pour water and bring to a boil. Enter
the fish, season salt and sour kandis. Cook until well done;
